Recipe:<\/p>\n

3 lbs honey
\n1 Cup hot black tea (I used Earl Grey tea….hence the name of the mead)
\n1\/2 orange peel (I used fresh orange and peeler)
\n1 Tblspn Fleischmans Yeast (Yup bread yeast)
\n2 oz chopped raisins<\/p>\n

I sanitized everything prior.\u00a0 I chopped the raisins and added them to the 1 Gallon jar.\u00a0 I poured in the honey.\u00a0 I didn’t use a funnel or anything.\u00a0 I added the hot tea to the honey pot to melt the remaining honey and get it out.\u00a0 I poured that into the gallon jug.\u00a0 I added the orange peel and then filled jug 1\/2 way with water.\u00a0 I shook and shook until it was mixed well.\u00a0 I then added the rest of the water (not all the way to the neck!!!) and added the yeast.\u00a0 Put the stopper on with water in the airlock.\u00a0 I did not have a hydrometer so I couldn’t take an initial reading for ABV.\u00a0 I will get one before I make the next batch though.<\/p>\n

The yeast started working almost immediately.\u00a0 I could see the airlock activity within an hour.<\/p>\n

\nEarl has been setting under my desk in the office for a little over a week.\u00a0 Haven’t touched it.\u00a0 There is still activity in the airlock.\u00a0 It will be time to swirl it on Saturday.\u00a0 Can’t wait!<\/p>\n

I swirled Earl today.\u00a0 There is still a fair amount of activity in the airlock.\u00a0 Not gangbusters but still going.\u00a0 Next step is to swirl again in a week.\u00a0 Then let it rest and rack.<\/p>\n

I swirled Earl again today.\u00a0 Airlock activity is slowing considerably.\u00a0 I’d say about every 30 seconds.\u00a0 It will be time to rack it soon.\u00a0 I’m going to give it another week or so but that will be Christmas time so we’ll see…..<\/p>\n

I racked Earl today into the 3 Liter plastic container that I have.\u00a0 Didn’t quite get 3L out of it.\u00a0 I left to much head space on the gallon.\u00a0 Tasted pretty good but very alcoholic.\u00a0 It will mellow and clear over time.\u00a0 Should let it rest for 4 more weeks…..<\/p>\n

I’m bottling Earl today.<\/strong><\/p>\n

I of course “tested” the mead also and it tastes amazing<\/strong>!!!\u00a0 I could really taste the orange.\u00a0 Not over powering but it imparted a great flavor.\u00a0 I didn’t get much raisin or tea flavor.\u00a0 It was still pretty cloudy as you can see in the photos but very (and I mean very<\/strong>) drinkable.\u00a0 Now all there is to do is try not to drink in all to soon.<\/p>\n

1\/23<\/strong>\u00a0 I poured a small amount for consumption last night.\u00a0 It is clearing very nicely in the bottle.\u00a0 The bottle that I tried was cold from being refrigerated.\u00a0 60 Days<\/strong><\/p>\n
