Including the juice from the cans. \r\nI added the Pectic Enzyme to the bucket and 1 tsp of the Yeast Nutrient.\u00a0 \r\nI'm rehydrating the yeast in warm water and I added 1 tsp of the Yeast Nutrient to this slurry.\u00a0\u00a0 \r\nI pitched the yeast to some very cold juice.\u00a0 It was setting at about 60 degrees when I pitched it.\r\nStarting Gravity 1.052. If it goes to 1.000 the potential ABV is 6.89%.\r\n\r\n\r\n<strong>2-10-23<\/strong><\/pre>\n<p>6 days.\u00a0 That&#8217;s all it took to ferment this.\u00a0 I didn&#8217;t sanitize the hydrometer or the cylinder so I had to taste what I extracted.\u00a0 <strong>It went down to 1.000.<\/strong>\u00a0 It&#8217;s very dry and has just a hint of pineapple.\u00a0 I&#8217;m going to leave the pineapple in for another week.\u00a0 Then I&#8217;m going to rack and add some clearing agent.\u00a0 I&#8217;d like to leave this racked until the end of the month to clear.\u00a0 Then I will add some back sweetener.<\/p>\n<p>2-15-23<br \/>\nI racked it off the pineapple today.\u00a0 I added 1 tspn of clay to help clarify.\u00a0 Should be ready to bottle on 3\/1\/23.\u00a0 It is still very dry but last time I tasted I added some sweetener.\u00a0 It was very very good with sweetener.<\/p>\n<p>2-24-23<\/p>\n<p>I back sweetened with 2 cups Splenda and 1 tsp vanilla extract.\u00a0 I transferred to the keg.\u00a0 I had some left out of the 2 gallons so\u00a0 I added 1 cup white sugar and about 1 tsp of bread yeast to bottle carbonate the cider.\u00a0 Hopefully I didn&#8217;t add to much sugar.\u00a0 2 1\/2 bottles are in the &#8220;Bottle Shelter&#8221; in case the go BOOM!!<\/p>\n<p>3-7-23<\/p>\n<p>I actually keged 1 gallon of this.\u00a0 At first it was wayyyy to sweet.\u00a0 We all tried it and agreed it was to sweet.\u00a0 After setting in the keg for about a week it really kind of mellowed though.\u00a0 It&#8217;s still to sweet but it&#8217;s very drinkable.\u00a0 I will be trying to improve this recipe.<\/p>\n<p>Clarity was a 10<br \/>\nMouthfeel was a 7<br \/>\nTaste was a 6 (to sweet)<br \/>\nABV 6.8%<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-365\" src=\"https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-169x300.jpg\" alt=\"\" width=\"169\" height=\"300\" srcset=\"https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-169x300.jpg 169w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-577x1024.jpg 577w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-768x1364.jpg 768w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-865x1536.jpg 865w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-1153x2048.jpg 1153w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-1568x2785.jpg 1568w, https:\/\/wordpress.mrice.net\/wp-content\/uploads\/2023\/02\/Earls-Pineapple-Cider-SG027-scaled.jpg 1441w\" sizes=\"auto, (max-width: 169px) 100vw, 169px\" \/><\/p>\n","protected":false},"excerpt":{"rendered":"<p>2-4-23 2 Gallons Great Value 100% apple juice 3 1.4 lb cans Pineapple Chunks in juice 1 tsp Pectic Enzyme 2 tsp Yeast Nutrient 1 package Lalvin 71B yeast I added both gallons of apple juice to the sanitized bucket.
