{"id":389,"date":"2023-02-24T15:56:55","date_gmt":"2023-02-24T20:56:55","guid":{"rendered":"https:\/\/wordpress.mrice.net\/?p=389"},"modified":"2023-06-27T22:24:36","modified_gmt":"2023-06-28T02:24:36","slug":"earls-old-lady","status":"publish","type":"post","link":"https:\/\/wordpress.mrice.net\/?p=389","title":{"rendered":"Earl&#8217;s Old Lady"},"content":{"rendered":"<div class=\"pdfprnt-buttons pdfprnt-buttons-post pdfprnt-top-right\"><a href=\"https:\/\/wordpress.mrice.net\/index.php?rest_route=%2Fwp%2Fv2%2Fposts%2F389&print=pdf\" class=\"pdfprnt-button pdfprnt-button-pdf\" target=\"_blank\" ><img decoding=\"async\" src=\"https:\/\/wordpress.mrice.net\/wp-content\/plugins\/pdf-print\/images\/pdf.png\" alt=\"image_pdf\" title=\"View PDF\" \/><\/a><a href=\"https:\/\/wordpress.mrice.net\/index.php?rest_route=%2Fwp%2Fv2%2Fposts%2F389&print=print\" class=\"pdfprnt-button pdfprnt-button-print\" target=\"_blank\" ><img decoding=\"async\" src=\"https:\/\/wordpress.mrice.net\/wp-content\/plugins\/pdf-print\/images\/print.png\" alt=\"image_print\" title=\"Print Content\" \/><\/a><\/div><p><strong>2\/24\/23<\/strong><\/p>\n<p>Earl&#8217;s old lady:<\/p>\n<p>3 lbs honey (from Glenns)<br \/>\n15 Twinings Lady Grey black tea<br \/>\n1 gallon purified water<br \/>\nLalvin D47 (half packet)<\/p>\n<p>SG = 1.090<\/p>\n<p>I started by steeping the 15 bags of tea in 4 quarts of the purified water.\u00a0 I added the honey to the carboy and added the warm tea.\u00a0 Pitched yeast and put on the airlock.\u00a0 She&#8217;s pretty!<br \/>\n<strong>3\/21\/23<\/strong><br \/>\nGravity = 1.040.\u00a0 She&#8217;s still working though.\u00a0 This is going to need a couple of more weeks.\u00a0 Still very cloudy.\u00a0 First taste was good honey taste.\u00a0 Can taste the tea and the orange.\u00a0 The D47 is still going.\u00a0 I swirled it after I did the reading and moved inside to ferment at a little warmer temp.<\/p>\n<p><strong>4\/7\/23<\/strong><br \/>\nThis wasn&#8217;t clearing at all.\u00a0 I added 2 tsp to 1\/2 cup warm water of Bentonite clay.\u00a0 I racked it into a clean gallon and added the Bentonite.\u00a0 It&#8217;s clearing now.<br \/>\nSG = 1.014.\u00a0 Still a little sweet which is what I like.\u00a0 It&#8217;s gonna mellow with time.<\/p>\n<p><strong>4\/21\/23<\/strong><\/p>\n<p>Racked off the Bentonite clay.\u00a0 Added 1\/2 tsp tannin.\u00a0 SG = 1.006.\u00a0 Will need back sweetened.\u00a0 Good flavor, bad mouthfeel. <strong>It&#8217;s been 57 days<\/strong> since pitching yeast.<\/p>\n<p><strong>5\/12\/23<\/strong><br \/>\nBottling day!\u00a0 I used the peel off an orange (a small peel in each bottle) and of course sanitized everything.\u00a0 Got 5 full bottles.<br \/>\nI will create and print the labels today and get labels on them.\u00a0 Then to sit for a while&#8230;.. <strong>It&#8217;s been 77 days since started.<\/strong><\/p>\n<p><strong>6\/26\/23<\/strong> ~ 1 month tasting<br \/>\nThis did not turn out well at all.\u00a0 It needed back sweetened like I said.\u00a0 It was bitter and dry.\u00a0 I think the orange peel didn&#8217;t work like I thought it would.\u00a0 I will try and add some honey to the next cup that I have to sweeten it a little and see if that changes the flavor.<\/p>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>2\/24\/23 Earl&#8217;s old lady: 3 lbs honey (from Glenns) 15 Twinings Lady Grey black tea 1 gallon purified water Lalvin D47 (half packet) SG = 1.090 I started by steeping the 15 bags of tea in 4 quarts of the purified water.\u00a0 I added the honey to the carboy and added the warm tea.\u00a0 Pitched &hellip;
