\nI got some new honey at the GE farmers market.\u00a0 It tastes amazing.\u00a0 I’ve been reading recipes again and you know what that means.\u00a0 Got to get another batch going.\u00a0 (I now have 2 fermenting.\u00a0 This one makes 3)\u00a0 Here we go:
\n1\/2 oz Paraoh’s Paradise (Loose leaf tea from teajutsu.com)
\n32 oz Just Tart Cherry from Knudsen (Kroger)
\n32 oz Just Black Cherry from Knudsen (Kroger)
\n12 oz frozen Raspberries (Kroger)
\n12 oz frozen Sweet Cherries (Kroger)
\n1 tsp fermaid O
\nLalvin EC-1118 yeast
\n2 lbs honey.\u00a0 (Name goes here)
\nSpring Water (Dollar Tree)<\/p>\n

I started by steeping the loose leaf tea in about 1\/2 gallon of spring water and reconstituting the Lalvin yeast with the fermaid O in a small amount of spring water.\u00a0 While the berries were thawing, I added the 64 oz of juice to the carboy and the 2 lbs of honey.\u00a0 I shook the bejesus out of it.\u00a0 The mixture wasn’t going to fit in the gallon glass carboy so I had to switch to using a Kilwins bucket.\u00a0 I let the tea steep for 20 minutes.\u00a0 I added the mostly thawed fruit and tea to the bucket.\u00a0 I took a temperature reading and it was 72.\u00a0 I pitched the yeast and covered the bucket.<\/p>\n

S.G. = 1.106<\/strong> (if dry it’s going to be 14.2%)<\/p>\n

8\/18\/23 (21 days)<\/strong>
\nS.G. = 1.006<\/strong>.\u00a0 13.3%<\/strong> ABV.\u00a0 I racked off the fruit today.\u00a0 It’s dry and HOT.\u00a0 Cherry taste comes through nicely.\u00a0 Not much hibiscus though.<\/p>\n

8\/29\/23 (33 days)
\nStabilization DAY!!!
\n<\/strong>1\/2 tsp potassium sorbate
\n1\/4 tsp potassium metabisulfite
\n1\/2 tsp Wine Tannin<\/p>\n

9\/1\/23 (35 days)<\/strong>
\nBottling Day!!!\u00a0 I back sweetened with honey ONLY to 1.030 and bottled.<\/p>\n
